  This chutney can be seen in every south Indian house during the summer season when mangoes are available abundantly. It is very tasty when mixed with rice and dal or sambar.  I like it best with curds rice.  Raw mangoes are supposed to cool

This dosa comes out very crisp and is my favourite dosa with peanut powder or peanut chutney. It is nutritious and high in protein and calcium.  I eat this dosa three times in a weak.

When my usual dosa batter is left i add 4 to 5 tbsp of wheat flour and make this dosa.  It is soft and tasty and a change from the usual dosas.

Ingredients

  • 1 cup Dosa Batter
  • 1 cup Wheat flour
  • 1/2 tsp Salt
  • 1/4 tsp Soda
  • 1 Finely Chopped Onions optional
  • 2 Green Chilies Finely Chopped optional
  • 2 tsp Coriander Leaves Finely Chopped optional

Instructions

  1. Take the dosa batter to it add the wheat flour salt and soda and mix well with water.

  2. The consistency should be a little loose than dosa batter.  You can directly make the dosas or you can add the onion, green chili and coriander for more better taste.

  3. you should leave the batter aside for half to one hour.  But if you do not have time to ferment it you can make the dosas immediately.

  My mother always keeps this powder stored like sambar powder and uses it in all types of dishes like fries, kurmas, soups, of veg and non-veg varieties. I once found it in her shelf and used it and was amazed at the mouth watering

  This powder is my husband’s favourite. He eats it with anything and everything possible. It is very tasty and nutritious high in proteins, iron, calcium etc.  Children also will enjoy this powder in dosas and idlis.

This powder is made from channa dal and urad dal and curry leaves.  It is good with dosa idli rice etc. It can also be used to flavour some fries like bottle gourd, ridge gourd etc.

Ingredients

  • 1/2 cup Channa Dal
  • 1/2 cup Urad Dal
  • 1/4 cup Curry Leaves
  • 2 tsp Cumin seeds leveled
  • 1/2 tsp Salt
  • 8 Garlic cloves
  • 1 Gooseberry sized Tamarind Ball

Instructions

  1. First wash curry leaves, dry chilies, urad and chana dal and take a pan add oil and fry them to this add tamarind and fry till it softens and remove and keep aside.

  2. Now fry cumin seeds and then cool and add all the ingredients along with salt and garlic and grind to a smooth powder and store in a air tight bottle.

  It Tastes very good with dosas and idlis. It is also good with rice and ghee yummy. Very easy to make so all of you please try this. This powder can also be added to fries like beans fry, cabbage fry, potato fry etc.

Ingredients

  • 1 bunch Mint Leaves
  • 1 Cup Fresh Coconut Pieces
  • 1 tsp Fried Channa Dal
  • 6 Green Chilies
  • 1/2 tsp Salt

Instructions

  1. Wash the mint leaves and fry them a bit also fry the green chilies.

  2. Add all the above ingredients and grind to a paste and add tempering.

  3. Take 2 tsp oil add 1/2 tsp of mustard and cumin seeds and 1 tsp of channa and urad dal and 5 curry leaves and when they splutter add to the cutney and mix well.

Pudina and Coriander Chutney

This chutney can be used as sandwich spread. It is highly nutritious as both coriander and mint are cooling and have good vitamin contents.
