Vegetable Upma

Very tasty breakfast those who don't like simple upma can try this. It is more nutritious as we put lot of vegetables.

Ingredients

  • 1 glass Bombay Rava ( Sujji )
  • 1 Big Onion
  • 2 Small Tomatoes
  • 1/4 cup Peas
  • 6 Green chilies
  • 1 Potato
  • 1 Carrot
  • 6 Beans
  • 6 Curry Leaves
  • 1/2 inch Ginger Piece
  • 3/4 tsp Salt

Instructions

  1. First wash and cut all the vegetables into medium pieces. Slit the green chilies. cut the onion and tomatoes into small pieces.

  2. Grind the ginger and keep aside. Take a pan put 1 tsp ghee and fry the rava till lightly changes colour and gives out a good aroma.

  3. Then take the pan add 6 tsp oil and add channa and urad dal 1 tsp cumin and mustard seeds 1/2 tsp and when they crackle add curry leaves, green chilies and onions and fry till they soften then add tomato.

  4. When the tomato and ginger paste gets mushy add all the vegetables and 1/2 glass water and cook with lid closed.

  5. When the vegetables are done add 2 glasses of water if bansi rava or 3 glasses water if bombay rava and add salt and let the water boil.

  6. Then add the roasted rava and mix well and when it starts to boil decrease the flame to low and cook with lid closed. Keep stirring in between or it sticks to the bottom and burns.

  7. When the rava is cooked and gets a cake consistency switch off and garnish with coriander leaves.

  8. As a variation you can add ginger garlic paste instead of ginger and a little coconut masala also when you add tomatoes and fry well.

Ingredients

  • 2 Raw Bananas
  • 1/2 inch Ginger Piece
  • 8 Garlic Cloves
  • 1 tsp Pepper Cones
  • 100 gms Maida
  • 1 Small Onion finely chopped
  • 1 tsp Green Chili Pieces finely chopped
  • 2 tsp Lemon Juice
  • 1 tsp Salt leveled

Instructions

  1. Wash and peel the raw banana and cut into small pieces. Next grind garlic, ginger and pepper cones into a paste and mix this paste with the banana pieces and leave aside for half an hour.

  2. After half an hour take them in the cooker and boil them for 7 minutes after the whistle and switch off.

  3. Then smash the banana into smooth paste and add salt, maida, chili pieces, onion pieces and the lemon juice and mix well and make into small balls and keep aside.

  4. Take a deep pan and fill 1/4 of it with oil and let the oil get heated then drop the balls in the oil and fry few at a time till golden brown, remove from oil and serve hot with sauce or chutney.

My favourite dish with bread it is good for breakfast and also as a snack. Great boon for bachelors and working mothers. Your children will eat it without making a fuss. You can make the curry and use it on bread when ever you like.

Ingredients

  • 8 slices Bread
  • 5 Tomatoes finely chopped
  • 3 Big Onions finely chopped
  • 1/2 tsp Salt
  • 5 Garlic Cloves finely chopped
  • 1/4 tsp Chili Powder or less
  • 4 cubes Cheese

Instructions

  1. Take a pan add oil and add garlic and fry for some time now add chopped onions chilies and tomatoes and fry well.

  2. Then add chili powder, salt and coriander powder and fry till done.

  3. Now spread this curry on all 8 breads dividing equally and top it with shredded cheese and toast it in the oven for 8 to 10 minutes on 180 degrees. And serve hot.

  4. You can also add capsicum and corn as variation. I also like adding some chili flakes on top.
