Tasty and easy rice recipe usually made on festivals. Children love it i also love it. My grand mother used to make it for every festival. I used save and keep it for the next day also.
Wash the rice thoroughly and take it in a thick bottomed vessel. Pour 4 glasses water and leave to soak for 1 hr. Then keep it on high flame till the water starts boiling change it to low flame and cook till the water evaporates and the rice is cooked.
Take the cooked rice in a plate and let it cool. Now take a pan add 1/2 tap oil and fry the peanuts till light brown and keep aside now in the same oil fry the dry chilies and keep aside.
Now add the rest of the oil add 1/2 tsp each of mustard and cumin seeds and 1 tsp each of channa and urad dal and 7 curry leaves and when they splutter add green chili paste fry for some time add the dry chilies and peanuts and add turmeric 1/2 tsp turmeric and switch off.
Add the contents from the pan to the rice in the plate and mix thoroughly also take 2 lemons and squeeze the juice and add to the rice add salt and coconut paste and mix it well with the rice.
Chitranam is ready to serve with papad and potato fry and sambar.
