Experimented and it came out quite tasty so adding it. Very easy and i use the most easily available palak and corriander leaves so nutritious too. Good for the skin, hair and bones. Because of high protein, calcium, iron and vitamin A, C and B content.
First boil paneer in hot water for a minute remove it and cut into pieces which ever size you like.
Then blanch palak in hot water for a minute and let cool and grind it along with coriander leaves, musk melon seeds, chilies, ginger and garlic with salt.
Take a pan add 5 tsp oil and temper it with 1/2 tsp of mustard and cumin and when they crackle add the ground masala and fry for 5 minutes stirring now and then.
Then add the paneer pieces and fry with lid closed for another 5 minutes stir in between.
Now add lemon juice, fenugreek leaves powder and chili powder and a little water if too dry and cook for another 5 minutes. This should all be done on low flame. If the salt is less you can add some more.
Serve hot with chapathies, pulkas or parathas.
