Wash the brinjals and cut them into medium pieces and put them in salt water or they will turn black.
Then fry the poppy seeds and coriander seeds and grind them along with grated coconut and garlic cloves and keep aside.
Take a pan add oil and temper with cumin and mustard seeds and curry leaves when they crackle add brinjal pieces and fry till they get slightly brown and soft.
Then add the masala, turmeric, salt and chili powder and fry for two minutes then add less than 1/4 cup water and cook till the brinjals get cooked and the oil starts to surface and switch off and garnish with coriander leaves.
