Ridge Gourd with Cashew Nuts (Beerkaya Jeedipappu Kura)

A summer vegetable which is healthy and rich in nutrients made into a curry with an added cashew flavor to create a delightful tasting Indian dish.

Ingredients

  • 100 gm Cashew Nuts
  • 1/2 Kg Ridge Gourd
  • 1 Onion (Sliced)
  • 1 tsp Ginger Garlic Paste
  • 1/2 tsp Salt
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Chilli Powder
  • 1/2 cup Milk

For Seasoning:

  • 2 tsp Oil
  • 1/4 tsp Mustard Seeds
  • 1/4 tsp Cumin Seeds
  • 1/2 tsp Channa Dal
  • 1/2 tsp Urad Dal
  • 8 Curry Leaves

Instructions

  1. Cut the Ridge Gourd into small pieces.

  2. Soak the Cashew nuts in water for 30 minutes.

  3. Add the ingredients listed in the Seasoning above in a pan to create a seasoning.

  4. Add the following in a pan:

    Seasoning (made above)

    Onion pieces

    Fry till the Onions are translucent

  5. Add the following into the above mixture:

    Ridge Gourd pieces

    Salt

    Turmeric

    Chili Powder

    Ginger Garlic paste

    Cashew Nuts

  6. Fry for some time.

  7. Then add 1/2 glass water and cook till the Ridge Gourd is cooked.

  8. Then add the milk and cook for 5 min.

  9. Switch off the stove. Ready to be served. Tastes best with Chapati and Rice.
