Ridge Gourd with Cashew Nuts (Beerkaya Jeedipappu Kura)
A summer vegetable which is healthy and rich in nutrients made into a curry with an added cashew flavor to create a delightful tasting Indian dish.
Ingredients
- 100 gm Cashew Nuts
- 1/2 Kg Ridge Gourd
- 1 Onion (Sliced)
- 1 tsp Ginger Garlic Paste
- 1/2 tsp Salt
- 1/2 tsp Turmeric Powder
- 1/2 tsp Chilli Powder
- 1/2 cup Milk
For Seasoning:
- 2 tsp Oil
- 1/4 tsp Mustard Seeds
- 1/4 tsp Cumin Seeds
- 1/2 tsp Channa Dal
- 1/2 tsp Urad Dal
- 8 Curry Leaves
Instructions

Cut the Ridge Gourd into small pieces.

Soak the Cashew nuts in water for 30 minutes.

Add the ingredients listed in the Seasoning above in a pan to create a seasoning.

Add the following in a pan:
Seasoning (made above)
Onion pieces
Fry till the Onions are translucent

Add the following into the above mixture:
Ridge Gourd pieces
Salt
Turmeric
Chili Powder
Ginger Garlic paste
Cashew Nuts

Fry for some time.

Then add 1/2 glass water and cook till the Ridge Gourd is cooked.

Then add the milk and cook for 5 min.

Switch off the stove. Ready to be served. Tastes best with Chapati and Rice.
