  I love this curry. It keeps my body light and provides much fiber and wards off constipation. Its like a detox dish, I use green gram dal and amaranth leaves provides proteins, vitamin A, C and B. also high in anti oxidants.

Beans Papulapodi Fry

Very easy, tasty and nutritious item. Very less oil needed and good for those who are trying to lose weight. You can eat more of this vegetable without feeling any discomfort.  Less spicy and high fiber content.

Ingredients

  • 1/2 kg Beans
  • 1 Onion finely chopped
  • 2 tsp Fried Channa Dal Powder
  • 1/2 tsp Turmeric
  • 3/4 tsp Salt
  • 1/2 tsp Chili Powder
  • 4 Crushed Garlic Cloves
  • 4 tsp Oil

Instructions

  1. Wash and cut the beans into small pieces.  Take them in a cooker and cook for 5 minutes after the whistle put only three tablespoons water.

  2. Then take a pan put oil and add tempering of 1/2 tsp mustard and cumin seeds and 1 tsp of urad and channa dal and 5 curry leaves and when they splutter add the onions and fry for 2 minutes.

  3. Then add crushed garlic cloves and fry for sometime now add the beans from the cooker, salt, turmeric, and chili powder and fry till all the moisture leaves the beans and then add coriander powder and fry.

  4. To the end add fried channa dal powder and fry for another 1 minute garnish with coriander leaves and switch off.

This is my athama's chutney my husband's favourite is quite tasty and lickable gives a good taste to the dishes that you mix it with.

Ingredients

  • 3 big Tomatoes red ones
  • 1 big Onion
  • 11/2 tsp Chili Powder
  • 5 Garlic Cloves
  • 1/5 tsp Mustard Seeds
  • 10 Fenugreek Seeds
  • 1/2 tsp Salt
  • 5 Curry Leaves
  • 1/2 inch Small Tamarind Piece

Instructions

  1. Wash the tomatoes and onions and cut into small pieces and fry them separately and keep aside. 

  2. Also dry fry the mustard and fenugreek seeds and keep aside. Also fry the tamarind piece till soft.

  3. Now first grind the mustard and fenugreek seeds and to this add tomato, salt and chili powder and grind to a smooth and creamy paste Then remove in a dish. 

  4. Now grind the onions and garlic and add this to the tomato paste and mix well.

  5. Take a pan add 2 tsp oil, temper with  mustard and cumin seeds, add curry leaves and when they splutter add to the chutney and mix well and serve.

These murukulu or chaklis are so tasty children will love them.  The only difficult thing is getting the flour ready. I know it is quite difficult in these busy schedules to get time to make such elaborate dishes.  But these are worth it believe me.

Ingredients

  • 4 glasses Rice raw
  • 1 glass Urad Dal
  • 4 tbsp Sesame Seeds
  • 1 tbsp Cumin Seeds
  • 11/2 tbsp Salt

Instructions

  1. Wash and soak the rice for 4 hours in water then throw away the water.

  2. The rice should be dried in the sun till it gets completely dry.  Those in appartments can leave them in big plates in balconies to dry.  

  3. Then take a big kadai and dry fry the urad dal till a tasty aroma comes and then both the rice and urad should be ground into fine powders.  

  4. My mother used to send them to the grinding mill near my house.  If the quantity is less you can grind in the grinder in your house itself.

  5. Once the powders are ready take them in a big plate and add sesame seeds, cumin seeds, salt and 5 tbsp Butter and a little heated oil and knead the dough adding a little water at a time.

  6. The dough should be like the chapathi dough.  

  7. Now take a big kadai fill 3/4 of the kadai with oil and when the oil is heated take the chakli press and put the required batter into the barrel and press into the oil making small rounds.  Don't over crowd them or they will not fry evenly.

  8. When they are fried well remove them from oil and place them on a news paper so that the paper absorbs the excess oil. When they cool store them in airtight containers.

  I really don’t know from where my mother got this dish sounds like a chinese or japanese dish. Try it and see if it is to your taste. My cousin Bhavana tried it said it is very tasty her son loved it.  The pic
