Yam Fry (Kandagada Fry)
Kandagada Bilala Vepudu ( Yam Fry)
Very easy and tasty dish can also be made with potato and raw mangoes. High amounts of potassium and manganese and starch content is high but releases slowly so good for body rich in fiber too.
Ingredients
- 4oo gms Yam
- 10 Dry Chilies
- 11/2 tsp Coriander Powder
- 3 Onions
- 1 tsp Salt
- 1/2 tsp Turmeric
- 4 tbsp Oil
Instructions

Clean the yam well and peel it and cut it into flat pieces.

Grind the chilies, onion and add the paste to the yam pieces also add salt turmeric and coriander powder and mix well and put aside to marinate for 1 hour.

Take a pan add oil and temper with mustard and cumin 1/4 tsp and curry leaves 8 when they start to splutter add the yam pieces and fry for 2 minutes.

Now add water and close with a lid and cook till the yam pices are cooked might take about 5 minutes or less.

Now keep frying stirring occasionally till the yam pieces become a golden brow then switch off and serve hot with rice and dal.
