Vankaya Pulagura (Brinjal curry)

This curry is made similar like dal but without dal, vegetables are used in place of dal. Very easy to make and very nutritious too.  As vegetables are used you get all the vitamins you need and fiber too. Single vegetable can be used or two or more vegetables can also be mixed to make this curry. Good dish for bachelors as they can prepare it easily in cooker and it also tastes good with chapati or rice. Vegetables like brinjal, broad beans, cluster beans, even green leafy vegetables. All the gourds can also be used to make this curry. cook and see for yourself.

Ingredients

  • 6 Brinjals
  • 5 Green Chilies
  • 1 Onion
  • 5 Garlic Cloves
  • 1 tsp Coriander Powder
  • 1 Tamarind (big marble sized ball)
  • 1 tsp Salt
  • 1/2 tsp Turmeric
  • 1/2 tsp Chili Powder

Instructions

  1. Wash and cut the brinjals into medium pieces and put them in salt water. Brinjals turn black when exposed to air. 

  2. Cut the onion and chillies into pieces and keep aside.

  3. Now take a cooker put about 2 tsp oil and add onions, chilies, brinjal pieces, salt, turmeric,, garlic cloves and corriander powder fry for 3 minutes add 1/4 cup water close the lid and cook for 2 whistles and switch off,

  4. Once the pressure has decreased in the cooker open the lid and mash lightly  the ingredients with a ladle. 

  5. Then take a pan put 4 tsp oil add tempering (mustard and cummin seeds 1/4 tsp each, urad and channa dal 1 tsp each and 6 curry leaves and one dry chilli) and when they start spluttering add the mashed curry from the cooker into the pan and fry till nice smell comes and all the water is evaporated and the curry gets close.

  6. Tempering is very important for this curry. Serve with rice or chapati.
