Sorakaya Custard Bottle Gourd Custard

One of my favourites I always make it when ever I feel like eating some thing sweet.  Very nutritious sweet.  You can use jaggery instead of sugar for a more healthier dessert. Very cooling during the summers.

Ingredients

  • 1 Cup Grated Bottle Gourd (sorakaya)
  • 2 tbsp Ghee
  • 2 tbsp Maida or Cornflour
  • 1 litre Milk
  • 1/2 cup Sugar

Instructions

  1. Take the grated sorakaya in a pan and cook it till done do not add any water let it cook in its own juice.

  2. Then take another pan add ghee and fry few cashenuts and keep aside. In the same pan add maida and fry in the ghee till a nice aroma comes then switch off.

  3. Add this maida to a little cold milk and mix well. If using cornflour no need to fry mix it directly in cold milk.

  4. In a thick dish take the liter milk and let boil then add sugar you can add more sugar if you want it more sweet.  Then add the maida or cornflour to this milk and keep stirring then add grated bottle gourd, cashew nuts and cardamom powder and cook till a creamy consistency and switch off, cool and refrigerate.
