Simple Carrot Fry
Carrot is a nutritious vegetable good for the eyes, hair and skin. This vegetable should be a compulsory dish once every two days in some form or the other. This dish is the most easiest dish of all and it also tastes quite good with dal or kurmas.
Ingredients
- 5 Medium Sized Carrots
- 2 Onions small
- 2 Green Chilies finely chopped
- 1/2 tsp Pepper Powder
- 1/2 tsp Salt
- 1/2 tsp Turmeric Powder
- 1/4 tsp Ginger Garlic Paste
- 1/2 tsp Coriander Powder
- 6 Curry Leaves
Instructions

First wash the carrots peel them and cut them into small pieces also cut the onion into small pieces. Then take the carrot pieces in the cooker and boil them for 5 minutes after the whistle.

Now take a pan add 3 tbsp oil and when heated add 1/2 tsp cumin and mustard seeds, 1 tsp channa and urad dal and curry leaves and when they splutter add onions and chilies and fry till translucent add ginger garlic paste and fry for 2 minutes.

Then add the boiled carrot pieces also add turmeric, salt, pepper and coriander powder and fry till a nice aroma comes and switch off and garnish with coriander leaves.
