Potlakaya Fry (Snake Gourd Fry)

Ingredients

  • 2 Snake Gourds Medium
  • 1/2 tsp Salt
  • 1/2 tsp Turmeric
  • 5 Dry chilies
  • 8 Garlic Cloves
  • 1 Onion big
  • 3 tbsp Oil

Instructions

  1. Clean, peel and cut the snake gourds into small pieces(remove the inside seed part). Grind the chilies and garlic and keep aside.

  2. Take a pan add the oil add the tempering(1/2 tsp each of mustard and cumin, 1 tsp each of channa and urad dal, 5 curry leaves) when they start to splutter add the onion pieces and fry till translucent and add the gourd pieces.

  3. Also add turmeric, salt, and fry for 5 minutes stirring now and then.  Now add water and cook till the gourd is properly cooked.

  4. Now add the garlic chili paste and fry for 4 minutes more keep stirring or it will burn.  

  5. Now switch off and garnish with coriander leaves and serve hot.
