I make this curry when I am in a hurry. It is easy to make and tastes good with rice or rotis. since both vegetables are nutritious and provide you with abundant protein and calcium and Vitamin A, B C etc.
Good for Diabetic patients too as foxtail is used. Millets are rich in proteins, fiber, Vitamins and minerals they provide lot of energy minus the high glucose content like in rice and wheat. You can say low glycemic index. So less fat and more nutrition. It is also good for those who want to lose weight. Millets were the staple food of our fore fathers.
Wash and soak the foxtail millet, Urad dal and fenugreek seeds for 8 hours. Then grind them in the grinder.
Also soak puffed rice in water one hour before grinding. Grind all the above smoothly and then let them ferment over night or at least for 5 hours.
To this add 1/2 tsp salt and 1/2 tsp soda and mix well.
Take a pan let it heat and then take a ladle of dosa batter and spread it evenly forming a smooth round and leave a 1/2 tsp oil around it and let fry till golden and slowly lift it off the pan from the edges.
Enjoy with chutney and sambar.

Wash the sorrel leaves and fry them till tender and let cool and grind them along with green chilies, sesame seeds and tomato into a smooth paste.
Wash the potatoes peel them and cut them into medium pieces. Now take a pan add onions and 4 curry leaves and fry till golden brown.
Then add the potatoes and add a little water cover with lid and let cook till done. Then add ginger garlic paste and fry for 2 minutes.
Meanwhile take the cauliflower florets in a dish add water, 1/4 tsp salt and cook them on low flame till they are half cooked. They get soft fast so keep checking.
When the potatoes are cooked add the gongura paste, salt, turmeric corriander powder and chili powder and mix well and fry well. Then add cauliflower florets and fry for another two minutes and switch off.

I don't like cauliflower much so was wondering what to do and I came up with this recipe. I wanted the taste of pakodis without the deep fry part, so i tried this and was quite tasty so i thought i will add this in my website. Hope you will like it.
Take the cauliflower and separate it into small florets and take them in a dish add water and a little salt and boil for 5 minutes till the florets are cooked. They should not get too soft.
Chop the chilies, ginger and garlic into fine pieces. Chop the onions also.
Take a pan add 2 tsp oil and add the green chilies, onions, garlic and ginger pieces and fry till the onions get translucent add 5 curry leaves also.
Take the besan and fried chana dal powder in a dish add little salt and pepper powder and add water little by little and mix well till it gets consistency of dosa batter.
Now take a kadai and add 4 tbsp oil and add the cauliflower florets and fry for 2 minutes then add the besan batter and mix well so it coats the florets evenly and fry till golden brown. If you feel you can't manage them all at once you can fry them little at a time.
Once the cauliflower gets fried well add the fried onion masala and chili powder, coriander powder, fenugreek powder and fry for some time and switch off and garnish with coriander leaves and serve hot.
