Sorakaya Gujukura (Bottle Gourd curry)

Tasty with chapathis, ragi rotas, jona rotas even with bread. Wonderful with rice or millets as main or side dish and nutritious too. It is a vegetble that has cooling properties so good for pitta type of bodies.

Ingredients

  • 1/2 cup Rice
  • 1 cup Corriander Seeds
  • 15 Cloves
  • 5 Small Pieces Cinammon
  • 1 Big Bottle Gourd
  • 5 tsp Oil
  • 1 Big Onion
  • 1/2 tsp Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 3/4 tsp Salt

Instructions

  1. Take a pan and fry the rice, corriander seeds, cloves and cinammon on a slow flame till they emit a nice smell keep stirring continously. Then grind them and store in a bottle.

  2. Take the gourd wash peel the skin and cut into medium pieces, cut the onion also into small pieces.

  3. Now take a pan add oil and seasoning(mustard and cummin 1/2 tsp each, urad and channa dal 1 tsp each and 7 curry leaves) and let splutter then add onion pieces and fry till translucent add bitter gourd pieces salt, turmeric and salt and fry for sometime.

  4. Now add water and cover with a lid and cook till the gourd is cooked now add 2 to 3 tbsp  of the ground powder, add it little by little stirring so it does not form lumps.

  5. Cook for 5 to 6 minutes and switch off, garnish with corriander leaves and serve with rice or chappathi.

  6. You can also make this curry with ridge gourd or pumpkin also with snake gourd also. Very tasty and creamy curry.

Ingredients

  • 1 Cauliflower medium
  • 2 Onions big
  • 2 tbs Coconut Grated
  • 1 tbs Corriander Powder
  • 6 Garlic Pods
  • 1 tsp Chilli Powder
  • 1 tap Salt
  • 1/2 tsp Turmeric Powder
  • 4 tsp Oil

Instructions

  1. First grind coconut, garlic and corriander powder and keep aside. 
  2. Now take a pan add oil put 1/4 tsp each of mustard and cummin seeds also add 1/2 tsp of urad and channa dal and fry till they splutter now addonion pieces finely chopped. 

  3. Then add boiled cauliflower pieces( for boiling cauliflower put it in water add salt and boil for 5 minutes) now add little salt as you have already added while boiling. add turmeric and chilli powder and fry for sometime.

  4. Now add the ground masala and fry for 2 minutes and switch off.  do not fry for too long or the taste will differ. Garnish with corriander leaves

  • 1/2 kg Yam
  • 2 tsp Chilli powder
  • 1 tsp Salt
  • 1/2 tsp Turmeric Powder
  • 2 tsp Corriander powder
  • 1/2 Lime
  • 6 tsp Oil

Instructions

  1. Wash the Yam and peel the skin and cut into thin slices or pieces and put them in salt water,wash them thoroughly and take them in a dish and throw away the water.

  2. Now add salt, turmeric, chillipowder, corriander powder and lime juice and mix all the ingredients properly and keep aside for one hour.

  3. Take a pan add oil and add curry leaves to this add small portions of yam slices and fry nicely till done. 

  4. Towards the end after frying all the pieces add corriander powder and fry for 5 minutes. Gives out a nice crunchy leathery taste.
