This is another type of brinjal curry made by one of my aunties. Tasty and goes well with roti, paratha, rice, millets etc.
Grind onions,coconut,corriander powder, chili, salt and turmeric and keep aside
Wash and cut the brinjals into four parts to form a cup to stuff the masala always put the brinjals in salt water after cutting or they will turn black when exposed to air.
Now stuff the brinjals with the masala. Take a pan add oil add tempering(mustard and cumin 1/4 tsp each, urad and channa 1 tsp each and 7 curry leaves) when they start sputtering add the stuffed brinjals and any left over masala after stuffing should also be added.
Now fry for 7 minutes till the masala is properly fried now add the tamarind juice and extra water if needed close with lid and cook till the brinjals are done and the masala should turn a light brown with the oil filming on the top. The gravy should get thick.
Switch off and garnish with coriander leaves and serve hot.

Similar to brinjal pulagura very easy to make but has lot of nutrients and fibre.
Cut cluster beans green chillies and onion, tomato and keep aside.
Take a cooker and 2 tsp oil put the cluster beans, green chilies, tomatoes, tamarind, salt, turmeric, coriander powder and garlic cloves fry for 5 minutes add 1/2 cup water and close the lid and let cook for 5 minutes and switch off.
After the pressure in the cooker decreases remove the lid and smash lightly the ingredients with the ladle.
Then take pan put 3 tsp oil add the tempering( mustard and cummin 1/4 tsp each, channa dal and urad dal 1 tsp each and 6 curry leaves) when they splutter add the onions and when they get translucent add the ingredients from cooker and fry
If there is any water it should get evaporated completely then switch off and serve hot with rice. If you like garnish it with corriander leaves.

A unique dish not known by many but once you get the taste of it you cannot but like it, Speciality of the Nellore region. A dish cooked with tamarind juice. They eat it as a main dish. Finger licking.
Grind sesame seeds, 1 onion, coriander seeds and coconut and keep aside.
Cut the other onion into small pieces. Soak the tamarind ball in water for half an hour.
Make tamarind juice from soaked tamarind(pulp the tamarind with your hand and then seperate the water from the pulp, the pulp is discarded.
Take a pan put oil put tampering add onion pieces fry till light brown add the masala, turmeric, chili powder and salt and fry for some time when the nice smell starts to emit pour the tamarind water.
If needed pour plain water to get watery consistency and cook till the curry thickens and oil starts to seperate. You start getting an good smel, then switch off and serve with rice.
This dish can be stored for a week like chutneys. Its good with doshas also. This dish tastes good when you are sick and dont feel like eating anything. Tamarind is good for reviving your taste buds.
