Aratikaya Fry

This dish is a delicacy filled with nutrients. Raw banana is rich in fiber and healthy starch. High in vitamin B6, Vitamin C and copper. Good for weight loss as very low in fat.

Ingredients

  • 3 Raw Bananas
  • 8 Garlic Cloves
  • 1/2 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp salt
  • 1/2 tsp Turmeric Powder
  • 3 tbsp Oil

Instructions

  1. First wash and peel the skin of the bananas. Then cut them into small pieces and take them in a thick bottomed dish or pan and add 1/2 glass water and boil them for 4 minutes( Till it is cooked should not be overcooked or it will get mushy.

  2. Now grind the garlic and cumin and keep aside.

  3. Now take a pan add oil and temper it with 1/2 tsp each of cumin and mustard seeds, 1 tsp each of urad and channa dal and 7 curry leaves. When they start to splutter add cooked banana pieces and turmeric and salt and fry till the banana gets slightly brown. ,

  4. Then add Chili powder and the ground garlic and cummin powder and fry for another 2 minutes stirring continuously. Switch off and garnish with corriander leaves and serve hot with rice and dal or kurmas.

  5. It goes well as a side dish with most curries..

Ingredients

  • 1/2 glass Thick Butter Milk
  • 2 Green Chilies
  • 2 tsp Fresh Coconut Grated
  • 1/4 tsp cumin
  • 1 Small Piece Ginger
  • 1/4 tsp Salt
  • 1/4 tsp Oil

Instructions

  1. Take about 1/2 glass curd pour 1/2 glass water and make thick curd.  Then grind coconut, green chilies and ginger and add it to butter milk.

  2. Now take flat bottomed dish and add oil and add tempering this is very important for this dish. For tempering add 1/4 tsp of cumin and mustard seeds, 1 tsp of channa and urad dal and 6 curry leaves and 1 dry chili 

  3. Once they start to splutter add the masala added butter milk and keep for a minute and switch off. If you cook for long it will start curdling.   

  4. Garnish with coriander leaves and serve.

Ingredients

  • 1 tsp Pepper Seeds
  • 11/2 tsp Coriander Seeds
  • 1 tsp Cumin Seeds
  • 6 Garlic Cloves
  • 2 Lemons
  • 1 tsp Oil

Instructions

  1. First grind pepper seeds, corriander seeds, cumin and garlic cloves in blender and keep aside.

  2. Take a glass of water and to this add lemon juice( cut both the lemons and squeeze the juice into the water).

  3. Now take a pan add oil and add tempering(cumin, and mustard 1/4 tap each, urad and channa 1/2 tsp each and 4 curry leaves and one dry chili) once it starts spluttering add the lemon water.

  4. Once it starts boiling add the masala and cook for another two minutes and switch off. Garnish with corriander leaves.

  5. Gives out a tasty aroma and it tastes too good with rice. You can also drink it alone.  It is good for sore throat, colds, coughs and during fever too.
