Gulab Jamun

Gulab jamun is a very common sweet.  Many love it.  Its one of my sons favourites.  This recipe was given to me by my friend but i have never tried it.  I always make the MTR Gulab Jamun very easy and comes out good.  I will tell how to make the ready made one too.

Ingredients

  • 1 cup Milk Powder
  • 1/2 cup Sooji (rava)
  • 1 tsp Baking soda level tsp
  • 1 tbsp Ghee heaped
  • 1 kg Fresh Milk
  • 1 tbsp Hot milk
  • 1/2 cup Raisins ( optional )
  • Oil for deep frying
  • Few Saffron Flakes

For Sugar Syrup

  • 2 cups Sugar
  • 6 cups Water

Instructions

  1. Make paneer from the one kg of milk.  You should add lemon to the boiled milk to curdle it then take the solid part in a cloth and squeeze out the excess water.

  2. To the paneer add sooji, ghee, baking soda and milk powder and knead gently adding one table spoon of hot milk.

  3. Roll into small balls stuff the saffron flakes and raisins if using them.

  4. Make the sugar syrup with the water and sugar keep it on low flame and let it thicken till a sticky consistency and switch off.

  5. Now take a deep pan and add the oil and let it become hot now add the paneer balls and deep fry to golden brown and add the balls to the sugar syrup.

  6. If using MTR gulab jamun mix follow the instructions on the pack.  I use a little less sugar then what they specify. My sugar syrup also is a little less thick. 

  7. When you make balls add water little by little and the dough should be kneaded to a soft ball and will not stick to your hands. apply a little oil to the hands when kneading the dough.

Ingredients

  • 250 gms Chikudukaya ( Broad Beans )
  • 1 Big Onion
  • 1 tsp Fried Channa Dal Powder ( papulapodi )
  • 5 Garlic Cloves
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Salt
  • 1/2 tsp Coriander Powder
  • 1 tsp Chili Powder

Instructions

  1. Clean the broad beans and cut them into small pieces.  You can also break them with your fingers into pieces as you remove the fiber. Then boil in cooker for 3 whistles.

  2. Cut the onion into small pieces. Take a pan add 3 tsp oil add 1/2 tsp of mustard and cumin and curry leaves and when they crackle add onions and fry then add  the broad beans, salt turmeric and garlic paste and fry till it gets dry.

  3. To the end add the chili powder and channa dal powder and fry for another two minutes and garnish with coriander leaves and switch off.  some grind the channa dal and garlic cloves and store this powder to use when needed.

Ingredients

  • 6 Brinjals
  • 2 Small Onions
  • 5 Garlic Cloves
  • 2 tbsp Coriander Seeds
  • 1/2 tsp Turmeric Powder
  • 1 tsp Chili Powder
  • 1/2 tsp Salt

Instructions

  1. Wash brinjals and cut them into long pieces. Cut the onions into small pieces too.

  2. Fry the coriander seeds and grind them along with garlic cloves and keep aside.

  3. Take a pan add 6 tsp oil and temper it with cumin and mustard seeds when they crackle add onion pieces and fry till light brown.

  4. Now add brinjal pieces, turmeric, chili powder and salt and close lid and cook till brinjals get tender.

  5. When they are properly fried add the masala and fry for another 5 minutes and switch off and serve hot with rice or rotis.
