Ingredients

  • 1 kg Chicken
  • 1 tsp Salt
  • 1/2 tsp Turmeric
  • 1/2 tsp Chili Powder

For the Masala

  • 10 Garlic Cloves
  • 6 Green Chilies
  • 1/2 cup Coriander Leaves
  • 15 Pepper Corns

Instructions

  1. Clean the chicken and wash it well with water and squeeze out the excess water and take it in a cooker and add salt, turmeric and chili powder and cook it for 5 minutes after the whistle.

  2. Now Grind the above ingredients and make a smooth paste.

  3. Take a pan add oil and add the ground masala and fry for 5 minutes till the raw smell goes away then add the chicken pieces from the cooker.

  4. Fry for another five minutes keep stirring often.  Fry till the chicken and masala get well fried.  The curry should not be too dry so switch off when still slightly wet.

  5. Serve hot with fried rice , pulav or simple white rice.

It is soup dish which is famous in south India and called rasam or Charu.  It helps to increase digestion.

Ingredients

  • 1/2 glass Tur Dal
  • 6 Tomatoes small
  • 1 marble sized Tamarind ball
  • 1/4 tsp Turmeric
  • 1/4 tsp Chili Powder
  • 2 tsp Oil

For Rasam Powder

  • 2 tsp Channa Dal
  • 8 Pepper corns
  • 2 Dry Red Chilies
  • 1 tsp Coriander Seeds
  • 11/2 tsp Desiccated Coconut dry

Instructions

  1. Dry roast all the ingredients for the rasam powder and grind them into a fine powder and keep aside.

  2. Soak the tur dal in water for one hour and take it in a cooker pour 3/4 glass water and boil for 10 minutes and switch off.  After the pressure decreases remove the lid and take only the dal water into a dish.

  3. Then wash the tomatoes and cut them into medium pieces and wash the tamarind with water and boil both in a dish and when the tomatoes get mushy switch off let cool and mash the tomatoes and tamarind thoroughly and filter the juice and keep it 

  4. Now add this juice to the dal water add salt, turmeric and chili powder.  In a pan add oil and add tempering ( 1 tsp of mustard and cumin seeds, 1 tsp of channa and urad dal and 5 curry leaves ) when it starts to splutter add it to the tomato juice.

  5. Boil the tomato and dal water on slow flame add the rasam powder and mix well and bring to a boil, let boil for 2 minutes and switch off, garnish with coriander leaves.  You can serve this hot with steaming hot rice and ghee, Yummy.

Ingredients

  • 1/2 kg Brinjals
  • 2 tsp Coriander Seeds
  • 2 tbsp White Sesame Seeds
  • 2 tbsp Peanuts
  • 2 tbsp Desiccated Coconut
  • 10 Garlic Cloves
  • 3 Onions
  • 1 lemon sized Tamarind Ball
  • 3 cloves
  • 4 small Cinnamon Pieces
  • 5 tbsp Oil
  • 1/2 tsp Turmeric
  • 1 tsp Salt
  • 2 tsp Chili Powder

Instructions

  1. First fry the coriander seeds, sesame seeds, ground nut seeds and tamarind Ball ( wash it before frying ) and onions. Fry them separately and grind them along with coconut,cloves, cinnamon and garlic. 

  2. Now wash the Brinjals and cut them into four parts to form a cup and put them salt water.

  3. Now take a pan add 2 tbsp oil and add the brinjals and fry them till they get a little brow and get soft remove from pan and in the same pan add 3 tbsp oil and temper.

  4. Temper with 1/2 tsp of cumin and mustard and 1 tsp of channa and urad dal and also 5 curry leaves and when they splutter add the turmeric, salt, chili powder an the masala and fry for two minutes and then add 1/2 glass water and cook.

  5.  Keep stirring in between, it might take about 15 minutes, the water gets less and the oil starts to surface. The gravy should not get too dry. You can garnish with coriander leaves and serve hot.
