Masala Dosa Sri Devi's
Sridevi was my mother's friend. My mom loved her dosas and she got the recipe into her cook book.

Ingredients
- 1 cup Urad Dal
- 31/2 cups Rice
- 1/2 cup Upudu Biyam ( Par Boiled Rice )
- 10 Fenugreek Seeds
- 1 tbsp Channa Dal

Wash and soak all the above ingredients in water over night and in the morning grind them into a smooth batter.

To the batter add 1 tbsp salt and 1/2 tsp soda and mix well and leave to ferment for 5 hours.

Then take a pan apply oil and rub with onion and pour a big ladle full of dosa batter in the middle of the pan and spread it lightly to form a perfect round and leave oil round the dosa and let fry till it browns.

The consistency if the batter is most important to get good crispy dosas. Should be a little loose than the cake batter.
