Corriander Rice (Kothimeera Annam)

Coriander leaves are known to have many nutrients so it is very good to eat this rice once every weak. Children do not like to eat green leafy vegetables but if mixed with rice and made tasty then they will not complain. This could be a very good lunch box dish for them. Very easy to prepare and also very tasty. One of my favourites. I get both taste and nutrients from this dish. High in vitamin K, A and C. Small amounts of B2 and B9. High in water content so cooling to the body in summers.

Ingredients

  • 1 glass Rice
  • 2 cups Coriander Leaves finely chopped
  • 2 Tomatoes medium
  • 1 Onion (finely chopped)
  • 8 Garlic cloves
  • 5 Cardamom
  • 11/2 tsp Coriander Powder
  • 5 Green Chilies
  • 1/2 tsp Chili Powder
  • 11/2 tsp Salt
  • 1/2 Lemon
  • 2 tbsp Oil

Instructions

  1. First wash the rice and soak it in water for an hour.  Cut the onion and tomato into small pieces.  

  2. Now grind the tomatoes, garlic, cardamom, salt, coriander leaves and green chilies.

  3. Now cook the rice in two glasses water.  Then cool it and take it in a plate or wide dish.

  4. Take a pan add oil and add onion pieces and fry till brown then add chili powder, coriander powder, turmeric and the ground masala and fry till oil oozes out and the raw smell of the coriander is gone.  

  5. Now add this masala to the rice and mix thoroughly also add lemon juice and taste and see if you need some more salt you can add.  

  6. Serve hot. If you want you can add fried cashew nuts and peanuts.
