Gudla Vepudu Janakama's ( Boiled Egg Fry )

Janakama was the best cook that i have come across. Even her simple egg curry tastes so good. You will also agree after making this curry. Egg as known by all is very nutritious high in proteins and vitamin B12 and B2, B5.

Ingredients

  • 4 Eggs boiled
  • 2 Onions big
  • 3 Tomato big
  • 1 tsp Coriander Seeds
  • 1/2 tsp Cummin Seeds
  • 1/4 tsp Fenugreek Seeds
  • 2 cloves
  • 2 pieces Cinnamon
  • 1/4 tsp Ginger Garlic Paste optional
  • 1/4 tsp Turmeric

Instructions

  1. Take a pan and fry coriander, cumin and fenugreek seeds, also fry clove and cinnamon and last you fry the onion and grind all the ingredients in a mixer.

  2. Boil the eggs and cool them and remove the outer shell and put small gashes on the eggs so the masala flavour soaks into the eggs well.

  3. Now take a pan add oil and the ground masala and ginger garlic paste (optional). Fry till the masala becomes brown now add the tomatoes, salt, turmeric and chili powder and mix well.

  4. Continue to fry till the tomato gets mushy now add eggs and cook till the masala is well mixed with the eggs and the oil starts to surface. The whole process might take 10 minutes.

  5. Garnish with coriander leaves and serve hot.
