Curried eggs
Rich in proteins and must for all growing children. Has B12 which is very necessary for cell renewal. Goes well with rice and chapatis or parathas.
Ingredients
- 4 eggs
- 1/2 tsp Ginger Garlic Paste
- 2 Onions big
- 2 tsp Curry Powder
- 1 tsp Coriander Powder
- 1/4 tsp Mustard Powder
- 2 Tomatoes big
- 1/2 tsp Turmeric Powder
- 1 tsp chili Powder leveled tsp
- 1 tsp Salt
- 3 tbsp Oil
Instructions

Clean, Cut and paste the tomatoes and keep aside. Cut the onions and grind and keep aside.

Boil the eggs, remove the skin. Fry them in little oil for 3 minutes and keep aside.

Now take a pan put oil and temper with 1/2 tsp of mustard and cumin and 5 curry leaves and when they splutter add onion paste and fry till light brown add ginger garlic paste and tomato paste and fry for another 5 minutes till mushy.

Now add salt, turmeric, chili powder, coriander powder, mustard powder and curry powder and fry for another 2 minutes and then add eggs and fry till the oil starts to ooze out then switch off and garnish with coriander leaves.

Now serve hot with rice or chapaties.
