Chintha Chiguru Kodigudu ( egg omelet with tamarind leaves )

Quite a novel idea by one of my best friends Aruna. Try this recipe and enjoy the unique taste of the combination of egg and tamarind leaves ( tender leaves ).  Egg is rich in protein and B complex and tamarind leaves are rich sources of vitamin C and iron.

Ingredients

  • 3 Onions Medium
  • 4 Green Chilies
  • 4 Eggs
  • 1/2 tsp Salt
  • 1/2 tsp Chili Powder
  • 5 Garlic flakes
  • 1 cup Tender Tamarind Leaves

Instructions

  1. Cut the onions and green chilies into small pieces and keep aside.

  2. You can cut the garlic flakes into small pieces or grind them and keep aside.

  3. Now take a pan add 9 tsp oil and when it heats up add the beaten eggs to which salt and chili powder has been mixed and make an omelet once it is cooked take it into a plate and cut into pieces.

  4. then in the same pan add 4 tsp oil add onion and chili pieces and fry add the garlic paste or pieces and when the onions get translucent add tamarind leaves and fry.

  5. If you want you can add a little water so the leaves get cooked well.  Once the leaves are fried then add the egg pieces and fry if you want it spicy add another 1/2 tsp chili powder.

  6. Garnish with coriander leaves and serve hot. Add salt to your liking.
