Brinjal Pulagura
Vankaya Pulagura
Most easy curry and healthy good with rice as main dish with a vegetable and papad.
Ingredients
- 6 Brinjals
- 5 Green Chillies
- 1 Onion
- 5 Garlic Peels
- 1 tsp Corriander Powder
- 1 marble sized Tamarind
- 1 tsp Salt
- 1/2 tsp Turmeric
- 1/2 tsp Chilli Powder
Instructions

Wash and cut brinjal into small pieces and put them in salt water and keep aside. cut the onions and green chilles and keep aside.

Take a cooker add 4 tsp oil and put brinjal pieces, onion pieces and corriander powder and fry for 5 minutes and add turmeric, salt and chilli powder and also add tamarind and pour 1/4 glass water and cook for 2 whistles and switch off.

Then remove the lid and take a ladle and mash the curry a bit. Then take a pan add 2 tsp oil and add seasoning and curry leaves once they splutter add the curry from the cooker and add onion pieces and fry for 5 minutes now the pulagura is ready.

Curry without dal is called pulagura.
