Bitter Gourd Fry (Kakarakaya Vepudu)
Many don't like this vegetable they think it is bitter but cook it the way it is in this recipe and you will be eating it everyday. A vegetable good for immunity boosting a must eat at least once a week a very less fat content and rich source of vitamin A and folates also zinc.
Ingredients
- 4 Bitter Gourds
- 3 Onions big
- 11/2 tsp Salt
- 3/4 tsp Turmeric
- 11/2 tsp Chilli Powder
- 2 tsp Corriander Powder
- 8 Garlic Pods
- 2 tsp Jaggery
- 1/2 lemon sized Tamarind
- 2 tsp Grated Coconut
- 4 tbs Oil
Instructions

First wash and peeled the gourds and cut them into small pieces and keep aside. Now cut the onion into pieces keep aside.

Now grind corriander powder, garlic, coconut and chillipowder and keep aside.

In a vessel take bitter gourd pieces add turmeric, 1/2 tsp salt, tamarind pieces and pour half a glass water or more till the pieces are submerged add jaggery too and boil till bitter gourd is cooked on slow flame. Throw away the water after boiling also squeeze out the water from bitter gourd pieces, this takes away the bitterness from the gourd.

Then take a pan add oil add tempering and curry leaves once they splutter add bitter gourd pieces and onion and fry for about 5 to 7 minutes till the pieces become chewy then add the masala and sugar 1/2 tsp and fry for another 2 minutes after tasting you can add some more salt and chilli powder according to your taste.

Tasty bitter gourd curry is ready goes well with plain rice and ghee. My favourite.
