Beerakaya Masala Curry (ridge gourd Masala Curry)

This is something like nuna vankaya, since its done with ridge gourd it has a unique taste of its own. It goes well with rice or chapathis. Its one of my husbands favourite curries. those who are allergic to brinjal can make this curry instead. Ridge Gourd is cooling vegetable good for feeding mothers, brinjal is heating and thus should not be used by them.

Ingredients

  • 3 Ridge gourds Beerakayalu
  • 3 tbsp Desiccated Coconut Dry can use fresh also
  • 1 tbsp Sesame Seeds
  • 2 tbsp Coriander Powder
  • 1/2 tsp Turmeric Powder
  • 11/2 tsp Chili powder
  • 2 Tomatoes big
  • 2 Medium Sized Onions
  • 8 Garlic Cloves
  • 1/2 tsp Cumin seeds
  • 6 tbsp Oil
  • 2 tsp Ground nut seeds

Instructions

  1. Wash and peel the ridge gourds cut them into big pieces and slit them into four forming a cup to stuff the masala.

  2. Now fry the cumin, tomatoes and onions then grind them along with coconut, garlic, turmeric, salt, coriander powder, ground nut seeds and chili powder.

  3. Take a pan and put oil and add tadka and fry then add the ridge gourd pieces and fry add a little salt and chili powder and fry till well cooked. then add the masala and fry for another five minutes.

  4. Then pour half glass water and cook for 10 minutes and if using cooker 5 minutes is enough.  Switch off garnish with coriander leaves and serve hot.
