Apam ( soft and fluffy dosa )
Mouth melting dosas easy to make and will be loved by all good with sambar, chutney and mutton or chicken curry also good with veg korma for vegetarians.
Ingredients
- 2 cups Rice
- 1/2 cup Sagubiyam ( Sago )
- 1 Coconut, whole
- 2 tbsp Curds
- 1/2 tsp Soda
- 11/2 tsp Salt
Instructions

Break the coconut and grate the flesh and grind it to smooth paste and extract the milk and keep aside.

Wash and soak the rice in water for 8 to 10 hours and grind it to smooth paste and mix the coconut milk with ground rice.

Cook the sagubiyam in the cooker or in a dish till well cooked. keep stirring so it doesn't form balls. Add this to the rice paste after cooling.

Marinate over night and next day add soda and salt and if too thick add some water and mix well.

Take dosa tava ( non stick pan ) apply a little oil to pan and after it gets heated take a big laddle full dosa batter put it in the middle of the pan and lightly spread the batter to form a round and leave a tsp oil around it and wait till it lightly browns and slowly separate it from the pan and serve hot.
