Anapakaya Gujukura
My favourite as i don't eat non veg it is like a special dish for me. It goes well with chapathis and rice. rich in protein and fiber. also a rich source of B complex.
Ingredients
- 2 cups Fresh Anapakaya Seeds
- 3 tbsp Desiccated Coconut Dry
- 2 tbsp Coriander Powder
- 2 tsp Chili Powder
- 2 tsp Salt leveled
- 3/4 tsp Turmeric Powder
- 1/2 tsp Pepper Powder
- 2 tsp Ginger Garlic Paste
- 2 Onions medium
- 1/2 cup Curd or Tomato
Instructions

Clean the anapakaya seeds and keep aside. Grind the coconut and coriander powder and one onion. The other onion chop it and keep it aside.

Now take a pan or cooker and add 5 tbsp Oil and add 2 cloves and 2 Cinnamon pieces and 5 curry leaves and fry then add the chopped onion and let it get lightly browned.

Now add the turmeric chili powder, salt and ginger garlic paste and fry for a minute and then add the ground masala and fry till the oil starts to surface now add pepper powder, curds and the anapakaya seeds.

Fry for 5 minutes and then add water, less than half glass water and close the lid and cook for 15 minutes after the whistle and switch off.

If You want the curry more close then you can fry it till the consistency you want comes then garnish with coriander leaves and serve hot
