Akura Pulagura ( dal and leafy vegetable papu )

I love this curry. It keeps my body light and provides much fiber and wards off constipation. Its like a detox dish, I use green gram dal and amaranth leaves provides proteins, vitamin A, C and B. also high in anti oxidants.

Ingredients

  • 2 cups Copped Amaranth Leaves
  • 2 tsp Green Gram Dal
  • 1 Onion Finely Chopped
  • 5 Garlic Cloves
  • 4 Green Chilies
  • 1/2 inch Tamarind piece
  • 1/2 tsp Turmeric
  • 1/2 tsp Salt
  • 1 tsp Coriander Seeds
  • 5 Fenugreek Seeds
  • 1 Tomato Finely Chopped

Instructions

  1. Clean and soak the green gram dal in water for 10 to 20 minutes.

  2. Mean while wash and chop the amaranth leaves. Peel the onion and cut into small pieces. Slit the green chilies and keep aside.

  3. Now take the cooker add 2 tsp oil and add the coriander and fenugreek seeds( don't take more then the mentioned number they cause bitterness) and fry then add half of the copped onions and green chilies

  4. Also add turmeric, salt, and 1/4 tsp chili Powder and fry till the onion is translucent now add tomatoes, green gram dal, tamarind piece and fry for two minutes and then add amaranth leaves.

  5. Fry for 5 minutes and then add 1/4 glass water and close the lid and cook for 5 minutes after the whistle and switch off.  

  6. Now take a pan add 2 tsp oil and temper with 1/2 tsp of mustard and cumin seeds and when they splutter add the left over onions and garlic cloves and fry till a nice aroma comes.

  7. Mean while open the lid of the cooker and smash the dal and leafy vegetable with a laddle ( Papu guthi ) and add this to the pan mix well and fry for some time switch off and serve with rice or rotis.
