Aku Charu (Leafy Vegetable Soup)
High in protein, iron and B vitamins very nutritious and high in fiber too. Good for constipation and helps to decrease weight. Tasty too can be taken as soup or with rice. Try it as a detox too.
Ingredients
- 1 glass Tur Dal or Green Gram
- 4 cups Green Leafy Vegetable finely chopped
- 1 tsp Cumin Seeds
- 1 tsp Pepper Seeds
- 1 tsp Coriander Seeds
- 1/4 tsp Fenugreek Seeds
- 4 Cinnamon pieces small
- 3 Cloves
- 1/4 cup Desiccated Coconut dry
- 7 Curry Leaves
- 1 tsp Chili Powder
- 8 Garlic Cloves
- 11/2 tsp Salt
- 1/2 tsp Turmeric
- 1/2 cup Tamarind Juice thick
- 2 tsp Oil
Instructions

Fry cumin, pepper coriander fenugreek, cinnamon, clove, and keep aside also fry curry leaves and coconut and grind all the above also add garlic and chili powder and grind and keep aside.

Now thoroughly wash the leafy vegetable ( you can use spinach, amaranth or both mixed) and cut it finely and boil it with the dal ( the dal should be soaked in water for 1 hour prior to cooking).

If you are using cooker then cook for 7 minutes and switch off. after it cools grind in grinder to a smooth paste.

Now take a pan add oil and add tempering 1/2 tsp each of mustard and channa dal and when they splutter add the tamarind juice and the ground masala and cook for 3 minutes and then add the dal and leafy vegetable paste and pour 1 glass water according to the consistency you need.

Cook for another 7 minutes and garnish with coriander leaves and switch off and serve hot.
