Easy Capsicum curry with Tomatoes
Very tasty curry easy to make and can be eaten alone with rice and chapatis. Can also be served as a side dish with dal and kurmas. Children also will love it. Healthy curry rich in anti oxidants and fiber. High in vitamin C and A also has good amounts of B vitamins.
Ingredients
- 2 Big Capsicum
- 6 Small Tomatoes
- 2 Onions
- 1 tsp Chili Powder
- 3/4 tsp Salt
- 1/2 tsp Turmeric Powder
- 2 tsp Coriander Powder
- 3 tbsp Oil
- 1/2 tsp Fried Channa Dal Powder
Instructions

Wash and cut the capsicum into medium pieces.

Wash and cut the tomatoes and onions into small pieces

Take a pan add oil add tempering (1/2 tsp of mustard and cumin seeds, 1 tsp of channa dal and urad dal and 5 curry leaves) when they start to splutter add onions and fry till translucent.

Now add tomato pieces and capsicum pieces to this add salt, chili powder, turmeric and 1/4 tsp ginger garlic paste. and keep frying for a minute close with a lid and cook till the vegetable is cooked.

It takes about 10 minutes on a low flame. Keep stirring in between or it will burn.

After the capsicum is well cooked add coriander powder and garam masala powder(optional). fry for 2 minutes keep stirring add the fried channa dal powder(papula podi) it gives a very good taste. fry for another 2 minutes and switch off.

You can also add 1 tsp of tomato sauce if you like it more sour, children will love if you add this it gives a unique finger licking taste.
