Lady Finger Curry With Tomato
Lady finger is rich in fiber and vitamin A and C. This curry tastes good with rotis also
Ingredients
- 1/4 kg Lady Finger
- 1/2 tsp Chili Powder
- 1/2 tsp Turmeric
- 3/4 tsp Salt
- 1 Onion big
- 2 Tomatoes
- 1 tsp Coriander powder
- 4 Garlic Cloves
- 2 tbsp Oil
Instructions

First grind the coriander powder and garlic in the blender and keep aside.

Now wash and cut the lady finger into round pieces. Cut the onion and tomatoes into small pieces.

Take a pan add oil and temper with cumin, mustard 1/4 tsp each, urad and channa 1tsp and 6 curry leaves and when they start spluttering add onion and fry till translucent. Now add tomato pieces.

Keep frying till the tomatoes get mushy now add lady finger pieces, turmeric, salt and chili powder and fry for two minutes.

Then add less than 1/4 glass water and close the lid and cook for 5 minutes then remove the lid and check if the vegetable is cooked if not cook for some more time keep stirring in between.

Once the lady finger is cooked add the corriander and garlic paste and fry till the gravy gets close and switch off and serve hot.
