Brinjal Curry Mani's

 This is another type of brinjal curry made by one of my aunties. Tasty and goes well with roti, paratha, rice, millets etc.

Ingredients

  • 6 Brinjals
  • 2 Onions big
  • 3 tbsp Desiccated Coconut
  • 2 tsp Corriander Powder
  • 1 tsp Chilli Powder
  • 1/2 tsp Salt
  • 1/2 cup Tamarind Juice
  • 7 tbsp Oil

Instructions

  1. Grind onions,coconut,corriander powder, chili, salt and turmeric and keep aside

  2. Wash and cut the brinjals into four parts to form a cup to stuff the masala always put the brinjals in salt water after cutting or they will turn black when exposed to air.

  3. Now stuff  the brinjals with the masala. Take a pan add oil add tempering(mustard and cumin 1/4 tsp each, urad and channa 1 tsp each and 7 curry leaves) when they start sputtering add the stuffed brinjals and any left over masala after stuffing should also be added.

  4. Now fry for 7 minutes till the masala is properly fried now add the tamarind juice and extra water if needed close with lid and cook till the brinjals are done and the masala should turn a light brown with the oil filming on the top. The gravy should get thick.

  5. Switch off and garnish with coriander leaves and serve hot.
