Potato Cauliflower Curry with Fenugreek Leaves

Looks good and tastes good.  Very nutritious too high in calcium and phosphorous good for bones and brain cells. Can be eaten with chappatie and also rice as side dish. i used to love eating it with rice and ghee yummy.

Ingredients

  • 4 Potatoes
  • 1 Onion
  • 1 cauliflower head medium sized
  • 2 Tomatoes
  • 2 bunches Fenugreek :eaves
  • 11/2 tsp Salt
  • 1/2 tsp Turmeric
  • 2 tsp Chilli Powder
  • 11/2 tsp Corriander Powder
  • 11/2 tsp Ginger Garlic Paste
  • 3 Cloves
  • 3 pieces Cinnamon
  • 6 tbsp Oil

Instructions

  1. Take a pan put oil add cinnamon and clove pieces and also onion pieces. Now add ginger garlic paste and fry till the onions are brown.

  2. Mean while wash, peel and cut potatoes into medium pieces also wash and cut the cauliflower into medium pieces. wash and cut the fenugreek leaves. 

  3. After the onions get slightly brown add the vegetables and fenugreek leaves. to this add salt, turmeric, chilli powder and coriander powder and fry for 5 minutes stirring occasionally.

  4. Then add water cover with lid and cook till the vegetables are cooked. Half glass of water is enough. 

  5. Continue to fry till the potatoes are golden brown. Garnish with corriander leaves and serve hot with rice or chapati.
