Dondakaya Gujukura (Ivy Gourd Fry) Janakama's
Rich in calcium and iron and also easy to digest and when it is tasty too an added bonus for food lovers. This curry is a boon for all non vegetarians who are restricted from eating non-veg on saturdays or during festivals, try this curry you will love it, vegetarians will love it even more.
Ingredients
- 300 gms Dondakaya (Ivy Gourd)
- 2 Onions
- 2 tbs Grated Coconut
- 1 tbs Corriander Powder
- 7 Garlic Pods
- 1 tsp Salt
- 1 tsp Chilli Powder
- 1/2 tsp Turmeric
- 1/4 tsp Fenugreek Seeds
- 1 tsp Cummin Seeds
- 4 tbs Oil
Instructions

Slightly fry the fenugreek and cummin seeds and when they have cooled put them in a mixie jar also add coconut, corriander powder, salt, chillipowder, turmeric and garlic pods and grind them all and keep aside.

Now wash the ivy gourds and slit them into four parts from the top to form a cup to hold the masala keep aside.

Now wash and cut the onions into small pieces and mix them thoroughly with the masala.

Then fill each of the Gourds with the masala. Now take a pan add oil and curry leaves 5 and add the masala filled gourds into the oil and the left over masala also should be added and it should be fried for 8 minutes, stirring occasionally with the lid on.

Now pour 1/4 cup water and cook with the lid on till the gourds are cooked and keep frying till the masala turns brown and the gourds get fried well, garnish with corriander leaves and serve hot.
