This is the recipe that I follow in my house. It makes good idlies soft and they taste heavenly with sambar . Idli is light to digest and healthy for old and young. So try it and enjoy.

Ingredients

  • 4 glasses Idli Rava
  • 1 glass Udhi Papu ( Urad Dal )
  • 1 tsp Salt
  • 1/2 tsp Cooking Soda

Instructions

  1. Wash the above ingredients and soak them in water for 5 hrs. Then grind them to smooth batter. First grind urad dal to smooth paste and then add rava and grind.

  2. Then take the batter in a container and leave it to ferment overnight. In the morning add soda and salt and mix thoroughly .

  3. The batter swells when fermented so always leave 1/4 of the container empty.

  4. Now take idli plates apply oil and put the batter in the plates and place them in the cooker. Before placing them in the cooker add 3/4 glass water in the cooker and close the lid and cook the idlis.

  5. Do not put the weight cook on high till the pressure builds up then decrease the flame and cook for 10 to 15 minutes switch off and let cool.

  6. Remove the idlis from the plates and seve hot with sambar and ghee.
