Curds Rice
Very cool in summer. My favourite dish during summer season. A compulsory dish in most of the functions. Very nutritious too. High in calcium and proteins. So definitely make it a compulsory dish a at least twice a week. You can add cucumber pieces to make it more nutritious. some add pomegranate seeds and grapes too. Needs very less oil and high in anti oxidants too.
Ingredients
- 1 glass Rice
- 4 cups Curd
- 2 Green Chilies
- 1 Onion small
- 15 Fresh Grapes (optional)
- 10 curry Leaves
- 1 tsp Salt leveled
- 1/2 tsp Grated Fresh Ginger
- 2 tsp Copped Coriander Leaves
- 1 Cucumber big
- 1/4 cup Pomegranate Seeds
- 1 tsp Oil
Instructions

First clean and cook the rice in 21/2 glasses water first in high till water boils then in low flame till the water evaporates.

Take a pan add oil and temper with 1/2 tsp of mustard and cumin seeds and 1 tsp of channa and urad dal and when they star to splutter add curry leaves, chilies and onion pieces and fry for 2 minutes.

Let the rice cool completely now mix the rice with the curd and salt. The rice should be made a little soft you can smash it with ladle then add the tempering and mix well. If you want to add cucumber pieces, grapes and pomegranate seeds add now and mix well garnish with coriander leaves and serve.
