Avial

A curry with lots of vegetables. Very nutritious as curd is also present. Try it. I tried it for the first time, it came out good very tasty my children loved it.

Ingredients

  • 2 Brinjals long variety
  • 2 Potatoes
  • 6 Long Beans
  • 3 DrumSticks
  • 8 Green Chilies
  • 2 cups Sour Curd
  • 1 tsp Cumin Seeds
  • 2 Raw Bananas
  • 1/2 cup Desiccated Coconut fresh
  • 1 tsp Turmeric
  • 1 tsp Salt

Instructions

  1. Clean and cut all the vegetables into medium pieces. Peel the potatoes and bananas before cutting.

  2. Now grind the coconut, chilies and cumin seeds.  Take a thick bottomed dish, put the vegetable pieces and add 1/2 glass water and cook till they are cooked properly. you can also cook them in the cooker for 5 minutes.

  3. Beat the curd smoothly add salt and keep aside.

  4. Take a pan add oil and temper with mustard and cumin 1/2 tsp, urad and channa dal 1 tsp and curry leaves and when they splutter add green chili and coconut paste, turmeric and fry add 1/4 glass water and cook for 5 minutes then add the cooked veges and fry.

  5. To the end add the smooth curd and cook for 2 minutes and switch off. can garnish with coriander leaves. If you find the salt to be less you can add some more.
