Egg Tomato Fry

Egg is rich in proteins and other vitamins.  It is also rich in B 12 Which is very important for cell renewal. Egg is very important for growing children. It is considered vegetarian and eaten even by those who are strict vegetarians. Egg contains disease fighting nutrients like lutein and zeaxanthin(web Md.com). It is a tasty side dish.

Ingredients

  • 4 Eggs
  • 2 Tomatoes big
  • 2 Onions big
  • 1/4 tsp Turmeric
  • 2 Green Chilies optional
  • 3/4 tsp Chili Powder
  • 3/4 tsp Coriander powder
  • 1/2 tsp Ginger Garlic Paste
  • 3 tbsp Oil

Instructions

  1. Boil the eggs, remove the shell and keep aside. You can boil them in the cooker or in a vessel. If using cooker cook them for 5 minutes after the whistle. If using vessel pour enough water to submerge the eggs and boil for 15 minutes. 

  2. Now cut the onions and tomatoes into small pieces and keep aside. slit the green chilies.

  3. Then take a pan add oil and temper with mustard and cumin of 1/4 tsp and urad and channa dal of 1 tsp and 6 curry leaves and keep aside.

  4. Once they start to splutter add onions and fry till translucent and add tomatoes and ginger garlic paste also add salt, chili powder, slit green chilies, turmeric and coriander powder and fry for 5 minutes the tomatoes should get mushy. 

  5. Now add 1/4 glass water and cook till the water is evaporated and the masala gets fried well and sticks to the eggs and when the oil starts to ooze out switch off and garnish with coriander leaves.
